  A Note From Anne

Dear ,

I have been what most people refer to as a health nut. I eat mostly organic and vegetarian, and have exercised my whole life. I expect good health, and, for the most part, I have it. Yet, with the slight scoliosis I have, there have been a number of pain bouts over the past 50 years. As I pack, I think everything in me is out of whack, and regardless of the fact that I saw a chiropractor on Monday and everything returned to working order, I’m having a tough time getting from the sitting position to standing up, but once I’m up, I’m fine.

At almost the same time my husband has started experiencing a lot more pain in his knee. He can lift a few things but his stamina and his knee are not what they used to be. We are incredulous that we have these physical breakdowns; we joke about it. Codependent people have two emotional halves that make one whole, but we laugh because it takes both of us to make one whole person physically and two of us to remember everything.

There’s an old saying that aging is not for sissies. It’s true. It’s best to laugh at the pain rather than use it as an excuse to make life hard. Pain is not fun, but when we have a hard attack about pain, we are not only in physical discomfort; we are also in emotional turmoil. We may not be able to get rid of the pain immediately, but we can always make any situation, even body aches and pain, EZier and EZier.

EZosophy is a philosophy that encourages us to make things EZ or at least EZier. Are you having a tough time? Making light of your dilemma may be right for you.  Take the following and make it yours. Imagine that the highest force in the universe is calling to you with words of comfort, compassion, and humor.

Dear One,

I am so sorry about your health, relationship, and money challenges. I know your little bruised spirit is teetering on the edge of insanity/ depression/ confession, and what in the hell is happening-sion. It looks as if you are going to have to change sion to shun. Shun that stuff - maybe you need a good con-cuss-shun. Yes, you cuss and cuss until the con is over, and when the con is over, you will find it easy to shun it all.

If everything feels like hell, then a good laugh is the next best thing to being okay. Actually, a good laugh is beside being okay, and when you sit close enough to okayness, you catch it. Okayness is highly contagious. This is designed to give you a good laugh. Take nothing seriously, even your current situation. Remember, it came to pass; it didn’t come to stay.

Anne's book, Standing in the Dark, is a salve for the out-of-control mind. Buckwheat Pancakes

It is no longer a secret that grains are not the cat’s meow. “But I like pancakes!” No problem. You can make pancakes from buckwheat. Buckwheat is a fruit seed and can be eaten by people who are gluten sensitive. Here’s my recipe.

Ingredients

  • 1 cup buckwheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg, beaten
  • 1 cup milk (I use coconut milk)
  • 2 Tbsps melted coconut oil
  • ¾ cup of raspberries (Frozen work well too. Be sure to defrost.)

I usually cook by feel, look, smell, and taste and don’t use a recipe, so the above is an approximation of the amounts you need to make pancakes. (You may use an egg substitute such as flax seed if you are vegan. Soak one tablespoon of flax seed meal in 2.5 tablespoons water for 5 to 10 minutes. This equals one egg). Mix dry ingredients in a separate bowl. Mix oil, milk, and egg and add to mixed dry ingredients. Stir liquid into dry mix gingerly. Add 3/4 cup raspberries. Mix. I’m guessing on the amount. If this doesn’t look like you will have several raspberries in each pancake, put in more. Option: Add fresh raspberries on top rather than have them in the pancakes.

P.S. The amount of milk is tricky. You don’t want it too thick because it is tough to get the middle done. Therefore, if one cup of milk isn’t quite enough, add a bit more – but it doesn’t need to be too runny either. Make small pancakes because large ones tend to stay raw in the center and well-cooked on the outside.

Serve with butter or Earth Balance, real maple syrup, and top with raw cashews. This makes a hearty breakfast. You can buy grade B maple syrup at Trader Joe’s. Grade B is not as refined as grade A; therefore it has more minerals.
